Spiced Pecans: Recipe of the Week


Shhhh… I have a secret!  

The holidays may be over, but there is no reason not to enjoy these delicious spiced pecans year round. You may be asking why this is a secret, it’s because of my husband.  Aaron loves these pecans.  During the first holiday Costco run of the season, Aaron proudly presents me with three 2 lb bags of pecans and an adorable smile.These pecans are an indulgence, and if I made them for Aaron year round, he might put on an extra hundred pounds.  In short, Aaron knows these as our spiced Christmas nuts, the rest of you now know the truth.

The version below is the true spiced version and they honestly have a bite.  For younger kids, substitute the chili pepper for paprika and leave out the crushed red pepper.  I mentioned Costco, this recipe requires 4 cups of pecans.  Pecans aren’t cheap, but the big bags at Costco are a great price and contain 8 cups.
4 cup pecans
1 tablespoon kosher salt
1/4 tsp paprika
1/2 tsp chili powder
1/4 tsp crushed red pepper
1/2 cup butter
2 tablespoons brown sugar
Preheat oven to 350*
Melt butter in a large bowl in microwave.
Add all spices and sugar, mix well.
Add nuts to bowl, mix well.
Pour nuts onto a foiled cookie sheet, pat into a single layer.
Cook 15 minutes.
I generally let the nuts cool so yummy sugar crusts form on the foil.  Then I use a spatula and transfer them to a serving bowl (crusts and all).
