Egg Muffins: Recipe of the Week

 Recipe of the Week: Egg Muffins: {adapted from www.recipegirl.com}

Now that school is back in full swing, I'm seeing a lot of peeps asking about meal planning, prepping, etc. So, I've got a great healthy option for brekkies on-the-go {and it's not my beloved Shakeology®} that you can make ahead of time! As they say, breakfast IS the most important meal of the day, right? Also, I’ve made a YouTube tutorial video link with the recipe included.

{Makes 12 egg muffins}

1.5 lbs. Italian sweet sausage, cooked and crumbled

½ onion, diced (video shows slicing an entire onion, but I used the remainder for another recipe)

6 whole eggs

6 egg whites only

1/2  c. milk

Salt and pepper, to taste

4 small handfuls fresh spinach, chopped

⅔ c. shredded cheddar jack cheese

Preheat the oven to 350°. Spray muffin pan with non-stick cookingspray. In a medium skillet, brown the sausage on medium-high heat. Cook until sausage is brown all the way through. Scoop the cooked sausage onto a paper towel-lined plate to drain and cool, then wipe out the pan with a paper towel.

Quickly cook the spinach in the same pan, just until wilted. Let it cool, then squeeze any excess moisture out of it.

Chop ½ small onion {while spinach is wilting}.

In a large mixing bowl, whisk together egg whites, whole eggs, and milk. Whisk in the crumbled sausage, wilted spinach, chopped onion and shredded cheese. Season with salt and pepper, to taste.

Pour egg mixture into the pan {approximately ⅓ cup into each muffin cup}

Bake for 25 – 30 minutes, until cooked through. Remove from oven and gently serve pieces from pan. Serve warm.

*Note: You can store the cooked egg muffins in the refrigerator for 3-4 days and re-heat them in the microwave.

* Feel free to get creative and change up your meat, veggie and cheese add-ins.
