Nothing hits the spot quite like comfort food. We had some leftover cheesy potatoes, whipped up some sauteed green beans with mushrooms, AND the store had a great sale on boneless chicken tenders. Voila, fried chicken strips that satisfied every family member!
Boneless Chicken Tenders (we did a pack that made 8 strips)
1 to 2 eggs beaten
Seasoning: Salt, pepper, garlic powder, onion powder, smoked paprika, & dried parsley
Panko Crumbs (I used Italian seasoned crumbs)
First, I let my chicken become room temperature. Grab a bowl for the eggs, a plate for the panko crumbs, and a bowl for the seasoned flour. This would be fun to make together as a family. Combine the seasonings and mix well with the flour. I would recommend gloves for easy clean up. Place the chicken in the egg, then dip it in the flour mixture. I dipped in the egg again then added the panko. This made the chicken have a lovely crunch and texture.
Heat the pan and add olive oil. Cook the chicken on medium high heat 3 minutes on each side until golden brown. I heated my oven to 225 to keep the chicken warm and cook a little longer. The chicken turned out amazing! Feel free to add dipping sauces if desired.
