So, I actually made and photographed four different recipes, thinking each might serve as my blog post for this month. They were all tasty, but I wasn’t satisfied that the photographs made them look tasty enough. Plus our theme for the month is supposed to be tailgate food. I have never been tailgating, at least not for football. I don’t know if this qualifies as tailgating food, but it would be good for a game time potluck. 

Cheesy Beef and Pepper Pasta Bake

Serves 8-10

Ingredients:

¼ cup of butter
½ large onion, diced
2 bell peppers, diced
2 cloves garlic, minced

2 tsp. pepper
2 tsp. oregano
2 tsp. paprika
1 lb. ground beef
3 tablespoons tomato paste
1 lb. cavatappi pasta
¼ cup flour
2 cups cheddar cheese, shredded
2 cups mozzarella cheese, shredded
1 cup chicken broth
2 cups milk
1 15-ounce diced tomatoes

Preheat oven to 400 degrees. Prepare pasta according to instructions, al dente. Melt the butter in a large pot or Dutch oven. Add the peppers, onion, and seasonings. Cook until the vegetables soften, about 8 minutes. Add the garlic and tomato paste and cook for one minute. Add ground beef and cook five minutes, until no longer pink. Add flour and stir, cook for 2 minutes. Add broth, tomatoes with juice, milk, and bring to a simmer. Add pasta and half of the cheese. Stir, transfer to 9X13 baking dish. Top with remainder of cheese and bake for 30 minutes.
